Easy One Pot Chili

One of my absolute favorite meals when it’s cold is chili! I really feel like this is one of those few recipes that I’ve really mastered and don’t do much to change it up, because it really doesn’t need it. Plus it’s super easy and can be prepped in about 15-20 min.

Our next door neighbor growing up made this for something and my mom and I loved it so much we asked for the recipe. This is my version of her recipe, I always have to change something (it’s just kinda what I do.) I really hope you enjoy it.

Tips before we start! This can be done on the cook top and served after 2 hours but the longer it cooks the better it tastes! I’ve even let it cook in the Crockpot overnight! Also you can change use whatever ground meat you would like but we love the combo of half beef, half sausage. And as always, you can add in an really does make it even better!
Easy One Pot Chili


Serves 6-8


2 lbs ground meat, we love a combo of beef and sausage (our favorite sausage)
30 oz canned tomatoes, I like either the Italian seasoned or fire roasted for extra flavor
15 oz kidney beans
15 oz chili beans
15 oz black beans
Chili seasoning packet or make your own with chili powder, smoked paprika, cayenne pepper, salt and pepper
1-2 tbsp cinnamon
½-1 cup water or broth of choice
*optional: minced garlic, chopped onion, hot sauce
*serving suggestions: sour cream, cheddar cheese, hot sauce, corn chips

Slow Cooker Directions:

1. Over medium heat, brown meats. Toss in seasonings to wake them up. Add to slow cooker.
2. If using, saute chopped onion in leftover grease from meat, until translucent, add in garlic until fragrant. Add all to slow cooker.
3. Drain and rinse beans, add that, water or broth and tomatoes (undrained) to slow cooker. Also add in hot sauce here if using (I always throw in a little even when the kids are eating but will add more if it’s just grown--ups)
4. Cook on low a minimum of 2 hours but can go for as long as you like...the longer the better!

Instant Pot Directions:

1. Set IP to saute on high heat.
2. Add 1 tsp cooking oil to IP, brown meat, saute onion if using.
3. Add in remaining ingredients.
4. Press cancel button. Secure the pressure cooker lid, close the vent to seal.
5. Set pressure cook time to 25 min and let it go (anyone else sing that last part?)
6. Let the pressure release naturally for 5 min, then vent until all pressure is released.

I have the 8qt 7 in 1 Instant Pot, it is perfect for our family of 5, my mom loves the 6qt DUO60 for her and Daddy!

  6. Tried this chili today...Was awesome! I diced up some jalapeno's to add a little kicker, and for some reason I wanted a slightly sweeter taste so I added a teaspoon of sugar. Was great..thanks for this recipe, we will use it again.

    1. I'm so happy you liked it! The jalapeƱos sound great in it also! I have used a poblano and really like it that way! I never would've thought about making I sweeter though! I will have to try that!
