Easy Homemade Roasted Tomato Basil Soup

It's still soup season!! Even though we've had touches of spring here and there, it's still cold enough for a good bowl of tomato soup! And do you know how easy it is to make yourself!!??? Super easy!

Watching the snow fall!
We had several snow days in December and I was so excited! We don’t get snow very often so when the beautiful white flakes start falling from the sky I turn into a big kid! I could not stop looking out the window, watching it fall! I jumped out of bed early the next morning just like the girls to go play! Unfortunately my fun didn’t last long. I sprained my ankle pretty early and it was all over for me. I still admired the beauty from the couch and my husband and the girls were incredibly helpful. I also had a super sweet friend bring us dinner! Let me tell you, not being able to cook had me itching to get back in the kitchen!!

Anyway, I said all of that to say, the cold, rainy weather we've had lately has me wanting homemade tomato soup!  I will say even though this recipe is easy and tasty you do need one piece of special equipment. I have an immersion blender that makes this a breeze and you don’t have to transfer hot food from one place to another, but a blender or food processor will also work.

I also think this could work in the Instant Pot as well, but I haven't tried it yet.

Bonus Tip: this works in any soup but is especially tasty in this one; save your cheese rinds, this one is great with a parmesan but whatever you have works. Toss it it when you are simmering all the ingredients and it will add in a ton of extra flavor!!

This is a great time to experiment with different flavors as well. Get adventurous! Try adding some other roasted veggies like bell peppers, fennel, or mushrooms. They can all be diced and roasted with the tomatoes!
Easy Homemade Tomato Basil Soup

Do you like tomato soup? The baby and I are the only ones in this house that will eat it, but I’m proud to say that the older girls did taste it. That alone is a huge win in my book!!


8-10 ripe tomatoes
1 Bell pepper (any color)
3 sprigs fresh basil (or 1-2 tbsp dried if that’s all you have)
2 sprigs fresh thyme (or 1 tbsp dried)
1 Box (32oz) chicken, beef or vegetable broth
½ C heavy cream
Cheese rind (maybe a 1 inch chunk)
Olive oil
Salt and Pepper to taste


1. Preheat oven to 350.
2. Cut up tomatoes and peppers to a similar size, I like a large dice.
3. Place veggies on your cookie sheet (my stone is my favorite for roasting) and drizzle with olive oil.
4. Season with basil, thyme, salt and pepper.
5. Roast veggies for 15-20 min
6. In a medium saucepan, add in broth, cheese rind and veggies. Simmer at least 10 min but you can cook longer for more of the cheese rind to get in there.
7. Once all ingredients are warm add in cream and blend. Be cautious with the hot liquids!!
