Homemade Spaghetti Sauce

Now, there are many great jarred spaghetti sauces out there, and it is just as easy to brown some meat and add in the sauce. I was all for that until we discovered my food sensitivities. Garlic and onions. UGH!! Garlic and onions are in EVERYTHING. Enter in the phase where I learn to make my own pre-made everything. I can make a seriously amazing salad dressing in about 3 minutes also...more on that in another post!

There are a few other things I’m sensitive to also, and I’m thankful it’s not an allergy (we have those in our family too!) I can still eat the things I’m sensitive to but sparingly and there may be consequences later. I can have garlic maybe once a week-ish and be ok. If I have any onion, it will either be because I didn’t know or once a month-ish. I still get headaches from them, but not nearly as severe as it used to be...we’re talking migraines with no relief that put me out for two days or more of that!!

Anyway...this recipe is really good, kid-approved and can be made in about 15 minutes if necessary, but spaghetti always gets better with time so I will throw this all in the slow cooker and let it cook on low all day when I have the time to do that. Plus I hid some extra veggies in the last time I made it and NO ONE noticed, not even my husband (WINNING.) What did I add in? Beets!! I cut them up into a small dice and let them cook in it all day...I bought them already cooked but you could absolutely roast them yourself while something else is in the oven. Hmmm sounds like another want to see that one?

You could also add in mushrooms, or bell peppers, or carrots, or olives...if you are trying to hide them, cut them small and let it cook all day...if you like the chunks leave em bigger. You can really adapt this however you prefer it, including the onions! You will want to saute any veggies you add in for extra flavor and texture.

On to what you are really here for!

2 lbs ground meat (I usually go with beef/chuck, but sausage would be tasty too! Or a mix of both)
30 oz canned tomato sauce
30 oz canned crushed tomatoes
30 oz canned petite diced tomatoes (I used fire roasted and it adds some good flavor)
2-3 tbsp tomato paste
4-6 tbsp dried Italian seasoning (or more, you do you)
Salt and pepper to taste

*optional ingredients:
Baby bella mushrooms, bell pepper, beets, carrots, olives, fresh garlic, onions…

**extra tip:
Save your parmesan cheese rinds (or you can buy just the rinds at some stores for pretty inexpensive) and freeze them. Use a small amount anytime you are making spaghetti or soup! It adds an incredible amount of flavor with very little thought!

1. In a pan on medium-medium high heat, brown your meat.
2. Remove the meat from the pan, drain most of the fat leaving 1-2 tbsp fats for veggies to saute          3. Saute veggies until soft/brown about 3-5 min
4. Move veggies to the side and add in 1 tbsp italian seasoning and the tomato paste to wake up the flavors about 1 min

5. Mix in all the sauces and tomatoes, stir and let simmer about 10 min and you’re done
**This is where I toss it all in the slow cooker and let it go until dinner time.

Serve over noodles, zoodles or spaghetti squash
